To assemble

Twenty minutes before cooking, season the salmon generously all over with salt and house spice. Meanwhile, in a small pot over low heat, warm the escovitch sauce with 1 teaspoon salt. Once warm, add the cold butter a cube at a time, stirring constantly so that the sauce emulsifies. Add the juice of 1 lime, then taste and adjust seasoning with more lime juice and salt. Cover to keep warm and set aside.

Heat a large sauté pan over medium-high and add the NKO. When it shimmers, add the salmon. For a fillet about 1½ inches thick, cook for 4 minutes, until deeply golden brown, then carefully flip and cook for 3 minutes more. The salmon should just start to flake when gently squeezed. (For thinner fillets, cook for 4 minutes on the first side, then flip and continue just until opaque and beginning to flake.) Remove to a plate.

To serve, swipe 1 tablespoon of smoked carrot purée onto a plate. Place the salmon over it, then top with 2 tablespoons escovitch sauce. Garnish with cilantro and serve immediately, with lime wedges.
